Restaurant Krijt in Apeldoorn, founded by three-star chef Jacob Jan Boerma, is located in a stately mansion on the edge of the city centre, with the Veluwe as its immediate surroundings. This culinary restaurant offers a unique cosmopolitan cuisine that combines global influences with the best local products. Everything is prepared with respect for the ingredients and the seasons.

Our Story

Krijt is more than just a restaurant; it is a place where culinary talent is given the opportunity to grow. Jacob Jan Boerma, known from the former three-star restaurant De Leest in Vaassen, shares his knowledge and passion here with a new generation of professionals. The daily management is in the hands of chef Edwin Franken and maître-sommelier Michèle van de Water. Both gained their expertise at De Leest and now lead the kitchen and the restaurant with their own signature style and a hospitality that feels natural. Together with co-partner Kim Veldman, they form the heart of Krijt.

At Restaurant Krijt, everything revolves around the love for the product, the season, and the craft. The dishes are characterized by recognizable flavours, enriched with fine acids, spices, and citrus notes. The nature of the Veluwe dictates the rhythm of the kitchen. Enjoy fresh, seasonal ingredients such as herbs from the nursery, onions from our own vegetable garden, green beans from the field, edible flowers from the picking garden, and dried garlic from the barn.
